This week everything is cozy and quick. Sneakily, it's all fairly healthy too! There are loads of vegetables in everything. If I can eat food that makes me feel cozy and it STILL manages to be a tiny bit healthy, I'll take it.
Loaded with kale, onions, tomato sauce, and parmesan cheese, this whole dish cooks in one pan in about 25 minutes. Perfect for a crowd too!
Dan Dan Noodles
Inspired by a traditional dish, my version is crazy easy because it starts with red curry paste and ends with a sprinkling of fresh bean sprouts and peanuts. Talk about a take-out fake-out.
Spicy Chorizo Clams
Another one pan wonder that combines Israeli Couscous (my favorite!) with spicy chorizo, clams and tomatoes. Make it less spicy by using different sausage (or more spicy!).
When a cookbook I was reading had a soba noodle salad on one page and potstickers on the next, I thought... can I combine these two? Turns out yes. And it's fabulous.
The fresh asparagus right now is epic. In case you didn't OD on it at Easter, try it tonight with risotto. It's ridiculously simple and gives you a great reason to drink a glass of wine while you stir.
